
This is both of them combined...
6 potatoes
4 eggs
100 g smoked ricotta
2 baby leeks
Black pepper
Rosmary
Salt
Extra virgin olive oil
How to prepare:
Boil the potatoes with the skin, in a pan with salty water.
Reserve it on a refrigerator over night.
Peel the potatoes off.
Grate the potatoes.
In a pan put the olive oil and braise the chopped baby leeks.
Put the grated smoke ricotta.
Put the potatoes.
Put a pinch of salt, pepper and the rosmary.
Mix everything and braise them for a few minutes.
In a bowl, put the eggs with a pinch of pepper and salt and mix.
Put it in the pan. Mix carefully. Cook in a extremely low fire for 10 minutes.
Turn it arround and leave for more 10 minutes. (it depends on the intensity of the fire of your oven)
then its ready.
Serve with salad.
