I was watching Cook Channel and the Jamie's program today was about Andalucia. First of all he cooked a delicious salad with tomatos, scallion and chorizo. After that, he cooked PAELLA for 500 people. The paella is the typical dish in the Comunidad Valenciana (Castellón, Valencia and Alicante) though everybody in Spain knows how to cook it. But as a valenciana person that I am, I would like to give you some tips (if you don't mind) to cook a real paella.
It's important to salt the meat the day before cooking the paella and keep it in the fridge. That makes the meat tenderer and very flavorous. Other important thing is that first of all you should fry the meat and when it is already cooked you'll add the vegetables ( red pepper, green beans, "bajocones"
. When they are almost ready you'll add crushed tomates. When the vegetables are fried you'll add water. And here you are another imnportant tip: you shouldn't add fish broth to cook a real paella, but you should add WATER and salt of course. The rest of the steps that Jamie followed to cook the paella were perfect! We also add snow peas when the paella is almost ready.
