Garlicky Prawns in Sherry
(serves 2)
1 tablespoon olive oil
300g raw king prawns, frozen
2 fat cloves garlic, crushed
1/2 teaspoon paprika
3 tablespoons sherry
small handful of parsley, chopped
bit of lemon zest
Heat the oil in a pan and when hot add the frozen prawns and cook for about 2 minutes until turning pink. Add the garlic and paprika and continue to cook for 1 minute. Then add the sherry allow to splutter and thicken. Add the parsley and you are ready to serve.
Turn out on to plates and grate a bit of lemon zest over or don't bother if you don't fancy it.
Serve with bread to mop up the juices. We were so hungry that we didn't even bother to cut up the bread and just ripped it apart. You got a problem with that? Me neither.
