Other Maltese recipes: Rabbit, Potatoes and Maltese bread
Rabbit in garlic and red wine (Fenek bit-tewm u l-Inbid)
Ingredients:
1 whole rabbit
3 glasses red wine
bay leaf
salt and fresh pepper
4 cloves crushed garlic
olive oil
600ml stock
fresh thyme
Cut the rabbit in medium sized pieces. and marinate it wine, bay leaves and salt and pepper. Cover and leave overnight in the fridge.
In a large oven proof pan heat the oil. Add the crushed garlic and fry for a few minutes paying attention not to turn them golden brown. Take the rabbit pieces and fry turning occasionally. When sealed from all sides remove from heat, add in the marinade, stock and thyme and season well. Simmer in oven for 60 minutes or till tender. Eat with traditional maltese bread (recipe below)

Accompanying this you may want to bake some potatoes Maltese style. (Patata il-Forn)
Ingredients:
2 large potatoes per person
salt and pepper
olive oil
fennel seeds
butter
Preheat the oven at 200Celsius/gas 6. Chop the potatoes. In an ovenproof dish grease the base with the butter. Add the potatoes covering the base in one layer and sprinkle with some olive oil. Season with salt and pepper and the fennel seeds. Cook for 45 minutes or until soft inside and crunchy outside.

Maltese bread (hobz Malti)
600g flour
10g salt
15g sugar
15g margerine
25g yeast
345ml luke warm water
1 tablespoon milk
Mix the flour, salt and margerine. Add the yeast. Make a mixture of the luke warm water, sugar and the milk. Add on to the flour and knead the mixture well until the dough is white and elasticated. 4. Place in a bowl, seal with cling film and a wet dish towel, place in a warm place for about 1 hour. Work the dough, cut into small pieces (50g). Place on a baking tray, paste with egg, cut with a knife and let the pieces rest for about 15 minutes. Cook in oven 450F (232C) gas mark 6-8 for 12-15 minutes.

Fabulous, thanks for posting these and I look forward to trying them out but I don't expect they will be as good as your Mum used to make.

I don't want to throw a spanner in the works but I was introduced to "Hobz" a few years ago by a mate who is Maltese and he has tried and I tried several variations and techniques to make Hobz in the UK and couldn't get the same thing.... a lot of it has to do with the type of flour we get here and I think the general heat that we don't get in the kitchen....

I think thats about right so I did a bit of research and used good old plain flour in the recipe the only difference is that you use slightly less (599g).
I cooked the Hobz and Tuna with Spaghetti yesterday and it was yummy although
I find that some recipes are never quite as authentic as they should be (when I cook them) but these rolls turned out great.

Hi,
I have a couple of questions regarding the maltese bread recipes:
1. What kind of flour should be used?
2. What kind of yeast should be used?
I tried baking the bread with average success. I didn't paste with egg as I didn't have eggs available.
The only problem that I noticed was that the bottom of the breads was not baked. It still had a floury taste. How can I overcome this?

Cryo, from the amount of yeast in the recipe I'd say that you use half a yeast cake (Frischhefe) and when it only says "flour" I suspect "normal" white wheat flour.

Is the yeast cake placed in with the flour or melted in the water?
The traditional maltese bread is done with yeast powder though

I really have no idea, but 2 grams of dry yeast for 600 g of flour is way too much. ![]()

How does one get that typical dark brown crust? Is 15mins baking time too less?
And how does one bake the underside of the bread?
