This cake is best made using a food processor, as you can simply add everything and blitz it up together, but you can easily make it by hand if you buy ground almonds and grate the chocolate into the mix. Like most desserts, this isn’t exactly the healthiest thing in the world, but it’s absolutely gorgeous. Just make sure you enjoy it as it’s meant to be enjoyed –a special treat every now and then
To make your cake • Preheat the oven to 160°C/320°F/gas 2 • Break up the chocolate, put it into a food processor with the butter, sugar, almonds, 1 tablespoon of the cocoa powder and the salt, and whiz until smooth • Crack your eggs, one at a time, into the food processor and add the flour • Whiz again until smooth
To bake your cake • Get a deep baking dish roughly 25 x 25cm in size • Butter the dish really well and sprinkle the remaining tablespoon of cocoa powder over it • Shake it around a bit so it lightly coats the whole surface of the dish • Pour the cake mixture into the dish, using a spatula to scrape it all out of the processor • Break the fudge into pieces and sprinkle these over the top of the cake mix, pushing any larger pieces down into the mixture • Pop the baking dish into the preheated oven and cook for 18 to 20 minutes • Take the cake out of the oven and stick a fork into the middle of it • If there’s a little bit of cake mixture on the fork when you pull it out, that’s okay – you want the cake to still be a little moist inside so that it’s nice and squidgy • However, if it seems a bit wobbly, pop it back into the oven for another 3 to 5 minutes to firm up a bit
To serve your cake • Let your cake cool slightly and serve it warm and gooey • Lovely with a dollop of crème fraîche, a scoop of vanilla ice cream or a bit of double cream
• 200g good-quality dark chocolate (70% cocoa solids)
• 175g butter, plus extra for greasing
• 120g soft brown sugar
• 100g blanched almonds
• 2 tablespoons cocoa powder
• a pinch of salt
• 4 large eggs, preferably free-range or organic
• 150g self-raising flour
• 100g fudge
crème fraîche or vanilla ice cream

11. by Kath on 14/08/2011 @ 21:30
This took WAY longer than 18 minutes to cook - more like 35 (and I have a fairly good fan oven)! Also, it needs more fudge... and maybe some choc chips (but maybe I'm just being greedy). It was pretty good though!

Just wondering, can I make the mix ahead of time and just store it in the fridge until I am ready to bake it? Have people coming for lunch on Good Friday and want everything done before they arrive, so I can just pop in the oven when its time for dessert!
17. by shefali on 09/04/2011 @ 12:20
Wondering how it would come out without adding fudge coz we dont get fudge in shops in India.....

This recipe is sooooo gooood. It's goooey gold!!! The first time I made it I only had half an hour to make the cake AND have a shower, get dressed, wrap a present... The process time only took about 5 minutes and the cook time was only about 18 minutes (in my new oven...it would have taken about 40 minutes in my old oven..LOL)!!!... I got ready while it cooked and when it was done I whisked it into the car (in the tin and all) went to lunch with family and after our meal I asked the waiter if I could bring the cake in to sing Happy Birthday. The lovely waiter obliged and even brought us plates so that we could eat and share it... The cake was a huge hit and the warm temperature made it doubley delicious. This is now in my all time favourite List of recipes. Such little effort with massive results... A definate winner!!! Thanks Jamie!!

I have made this cake twice. The first time i used ordinary cooking chocolate, and the second time i used cooking chocolate with 70% cocoa.
Both times I just didn't bother to bleach the almonds.
And the first time, I put in some fudge with maple syrup (just because we had some).
The cake tasted great both times.
